ok, this is a new one!  I only had a red onion, and was looking for something yummy to eat, so I chopped it up with 4, yes 4!, good size garlic cloves, then I added about 1/2 cup of pine nuts, never done that before, but hey. I like nuts ;-) , then the usual, frozen spinach, lots of feta, some parm, a lil mozzarella, then I whisked 2 small eggs, tossed it all and poured it into a pieshell, topped with a lil pepper and some more moz, and it’s baking right now!

ok, it was delicious!  I will definitely be making this again!  Super easy and super yum!

  

  Well, our form of juicing it!  With a blender.  We haven’t invested in a juicer yet, but it’s coming soon!  Til then Maegan presses all the buttons in a row on the blender and wala, we have a fruit blend!

 

  • 1 cup freshly picked blueberries
  • 1 cup freshly picked raspberries
  • 1 banana
  • 1 generous dollop of local honey(thanks Jodi!)
  • 1/2 c crushed ice
  • 1 squeeze of a lemon
This is a thick blend, I add more crushed ice if I don’t drink it down right away.  It makes 3 cold cups of good-for-you yumminess! 

 

Blueberry Buckle

mmmmm, what to do with all these blueberries?!?  Well, besides gobbling down handfuls everytime I walk by, and Maegan picking one here and there, we have been making awesome fruit smoothies! yum!  But before they deminished to a sprinkle over cereal I decided to whip up a Blueberry Buckle.  I was going to make pie, but didn’t feel like rolling dough, I rarely ever feeling like rolling dough, lol.  

 

So this is my unmeasured yummy Blueberry Buckle, taken from all my pie and buckle know-how.

  • 4 heaping cups of stemmed blueberries
  • 4 Tablespoons instant tapioca
  • about 1 cup sugar
  • 1 squeezed lemon
  • 2 teaspoons ground cinnamon, unmeasured of course
mix to coat berries.  I do use measuring spoons, but with this recipe you do not need to be exact.  Adjust sugar to how sweet your berries are AND how sweet your sweet tooth is.  I tossed everything together in a 9×12x2 pan.
  • 1 cup oats, I never checked if they were quick cooking or not, probably not
  • 1 cut nuts, we used walnuts
  • 1 cut flour, we used whole wheat
  • 1/2 c brown sugar
  • dash of salt
  • 1 teaspoon cinnamon
  • 1 stick butter, unsalted, cut into cubes
I blended the first to ingredients until coarse in my blender, then mixed in the next 3, then with my hand, yes, my hand ( I can’t be bothered with my hand blender) I mixed everything together.  Next, you sprinkle and drop the flour mix over the blueberries, I used all but 1/3c of the mix, I don’t want too much crumble to my berry! 
Now bake 40-50minutes until brown, crusty, bubbley, and oozing with blueberries juice!
Like yours juicier?  Omit the instant tapioca and use 1-2 Tablespoons of flour, arrowroot or cornstarch.

Isn’t time off always needed?

our trip to the doctor’s yielded great results: a minor ear infection.  Our prediatrician is so awesome.  Maeg’s has never had antibiotics, not since she was born, so she quickly asked if I wanted to try homeopathics and I was like, uh, yeah, but I took the ’script just in case.  

Our local Food Works store is also awesome!  An employee explained the difference between herbal remedies and homeopathics to me and it finally clicked.  I knew they were different, but always grouped them together in my head.  We left with ear drops already mixed with garlic and mullien oil.  She asked how Maeg’s was for the past few days and I mentioned how both of our diets were awful this past week with lots of sugar, and she mentioned probiotics, then quickly explained those to me.  So we left with probiotics for both of us!  And of course Maeg’s had to get something.  Luckily she choose some organic pecans from the cooler.  Good choice Maeg!

So pills have been swallowed, drops have been warmed and dropped, and now Maeg’s is swimming with Grandma watching while I take a breather.

It’s official, only dreaming of an organized work space this week.

Next week, we’ll both be probiotic healthy and ready to tackle some sorting.

Where is it?  It’s continuously being promised or actually forecasted, but then it’s get clouded over.  I planned an easy week of cleaning up my work-space this week due to the forecast.  I was promised heat, high temperatures.  I was looking forward to my cool work space in my cellar and loosing myself in all my ideas that have not yet come to fruitation.  

No such luck.  We’ve had cloudy days.  We’ve have thunderstorms.  We’ve had hail.  What we’ve had is a beautiful fun-loving five year old mermaid wearing her bathing suit each day in hopes of swimming in the pool for just a simple thirty minutes.  Nope.  Hasn’t happened yet.  

What has happened is my daughter complaining about the weather, crying about the weather, and wondering why she can’t swim between the lightening!  Which has left me frustrated, but otherwise engaged with my daughter.  I am barely getting my housework done.  Did also I mention my new role as a taxi for my teenage son?   

So my work room is still messy.  

And the reason my daughter was almost unbearable the past two days was not just minor temper tantrums about not swimming, no, nothing is ever that simple!, it’s because she’s sick.  Yesterday was spent soothing a sore throat, reducing a low grade fever, making tea and making my daughter comfy and extra-loved.  I gave in and watched a movie with her.  Note to self: Blue Lagoon is not appropriate for five year olds!  We quickly switched the channel and decided The Princess Bride is much more fun!

So today the sun appeared.  It looks promising.  

We have a doctor’s appointment at 11.  Of course she is dressed in her bathing suit.  No fever today.  No sore throat either.  Of course.

And my work space is still messy.  Sigh.
